Meta tags contain data about the subject matter of a web page.  Search Engines often use meta tags to find out more information about a web page.

A meta tag is hidden (from the user) information on a web page used by search engine crawlers and other applications to classify web content and determine the relevancy of the site. The meta tags help the search engines rank and list your website in their index. Meta tags are found within the <head> section of the source code within a web page.

From an SEO point of view the three basic meta tags that should be found on all of your site pages are a title tag, a meta description tag and a meta keywords tag.
